Handling SEVERE food allergies
Including: Anaphylaxis and coeliac disease.
In recent years the number of food allergies, food intolerances and special diet requests has increased dramatically and the complexity of managing this on camp is challenging. We aim to provide safe, nutritious and delicious food for everyone. Active Education Catering staff complete the following two specific Allergen courses.
- All about Allergens for Camps - FA Training: All about Allergens for Camps (foodallergytraining.org.au)
- All about Allergens for Cooks and Chefs - FA Training: All about Allergens for Cooks and Chefs (foodallergytraining.org.au)
Refreshers of these courses are attended every 12 months.
All catering staff also hold the appropriate levels of Safe Food Handling accreditation.
IMPORTANT DISCLAIMER
Active Education takes the handling and preparation of meals for SEVERE food allergies, anaphylaxis and coeliac disease seriously & makes every attempt to reduce the risk of an allergic reactions for those participants with food allergies.
Unfortunately, there is always risk of contamination beyond our control and although we have strict cross contamination practices; we can not guarantee a total absence of these Allergens

To manage this we undertake regular audits of ingredients used in our cooking to identify possible allergen changes - Kitchens used by other groups:
We are not the sole users of the Kitchens where we store & prepare food. To manage this our staff undertake a cleaning process prior to preparation - Food/Meals not prepared by Active Education
From time to time campers eat food not provided by Active Education - this includes on Recess & Lunch Day 1 of camp or food provided by Camp leaders. We are unable to manage this and therefore can not take any responsibility for this.

Peanuts & Tree Nuts
Due to the risks associated with Nuts and Anaphylaxis, we have run a "Nut Aware" Menu for over 10 years. This essentially means that while we have removed all items known to contain Nuts, we still do use a variety of Products labeled as "May contain traces of nuts".
All participants identified as being anaphylactic to Peanuts or Tree Nuts will not be served products that ‘may contain traces of nuts’ unless notified by parents/caregivers in writing

COMBINED SPECIAL DIETS
Combination/Multiple Allergies
Due to the complex nature of a participant with Multiple/Combination of Food Allergies/Requirement our catering manager will design a specific menu that will be as close to the standard menu as possible.
Other Dietary Preferences
Vegetarian/Vegan
- BARBECUE – Mushrooms and tomatoes grilled, panfried pumpkin and zucchini with fresh garden salad and coleslaw (dressing free)
- LASAGNE OR SCHNITZEL – (second night option) Napolitana sauce with roasted vegetables served over penne pasta
- BREAKFAST – Baked beans on toast or grilled tomato on muffin
- MYO ROLLS/WRAPS - Tomato, carrot, cucumber, salad leaves
- HOT DOG/CHICKEN BURGER - Oven baked falafel \ served in a roll with salad
- PIZZA SUBS – Mushroom, spring onion, tomato, capsicum and pumpkin
- SNACKS – Fresh fruit, muesli bar
Halal
Campers who require Halal meals will be provided the Vegetarian Options above with the addition of chicken (Halal) to some meals
Please feel free to provide your own Halal meat following the guidelines below.
Pork
Wherever Ham or Pork products appear on our menu there are always other suitable options served
Providing Your own Food Substitutions
At Active Ed we know that life with Allergies is hard and that sometimes there are only particular foods that children/adults with Allergies eat. Our catering staff are happy to serve meals/snacks/milk* provided by parents however there are a number of requirements for this:
- Foods MUST be clearly Labelled with campers Full Name
- Any perishable items MUST be sent in a chiller bag with adequte icepacks to keep product cool
- Please provide a note of the meals being substituted and any cooking instructions
*All substitutions provided MUST be Nut Free including NO nut based milks
